Homemade No-Bake Healthy Muesli Bar!

DSC_0014I am always on the go – whether it be work, catchups, working out or the school run, I am constantly running out the door and find that I always grab a muesli bar on my way out to snack on later. This is a horrible habit when store bought bars generally include a number of unwanted and unncessary additives and sugars, so I decided I would try and find a recipe to make my own at home – and BOY did I luck out!

This recipe is very inter-changeable, so feel free to add anything else you might like! No baking required and it takes 20 minutes to set in the freezer and thats it!DSC_0013

1 cup packed dates (make sure they are pitted!)
1 cup rolled oats
1/4 cup organic honey
1/4 cup organic peanut butter
1 cup unsalted roasted almonds
& thats it!  feel free to add cranberries or dark chocolate chips etc

Process your dates until dough like consistency.
Place oats, almonds and dates in a bowl.
Warm peanut butter and honey over saucepan on low heat until runny consistency (BE CAREFUL NOT TO BURN!!!).
Pour over oat mixture and mix thoroughly to ensure dates and almonds are evenly distributed.
Lay out in 8×8 pan lined with parchment paper and place another piece on top and press down evenly.
Place in freezer for 15-20 minutes to harden and slice up into approx 10 bars.

These can be stored in the fridge or freezer for a few days  to keep them fresh (if they last that long!)

These are honestly so yummy and such a great alternative to the store bought sugar filled bars! I will grab one and chuck it in a sandwich bag to put it in my purse for an on the go snack and its amazing!DSC_0015
