Up until about 12 months ago I didn’t even like bananas let along banana bread, until one day I was craving something sweet and snacked on a banana in my kitchen and viola, the love affair begins! This of course kickstarted my love of banana bread and many other banana flavoured treats!
Unfortunately banana bread is generally full of sugar which makes it a little less appetising for someone trying to lose a few pounds! So with a lot of research and trial and error, I came across a much healthier alternative to banana bread that still tastes good on the lips but won’t hit the hips!
As per usually Katie was the source of the original recipe, with some slight variations from myself and we have a winner!
What you need:
2 c flour of choice! (I used wholemeal)
1 tsp baking soda
1/2 tsp cinnamon
3/4 tsp baking powder
3/4 tsp salt
1/3 c milk of choice OR oil (I used almond milk but oil is generally nicer)
1 and 1/2 tsp pure vanilla extract
1/2 cup honey
1 and 1/2 tbsp lemon juice
pinch uncut stevia, brown sugar OR 1 tbsp agave/maple syrup
1 and 2/3 c tightly-packed, mashed banana (measured after mashing)
1/4 cup shredded coconut / chocolate chips / berries (optional)
What to do:
Preheat over to 175°c ,Mix together dry ingredients and wet ingredients seperately, then combine them together (by hand or you will over mix!) Pour into greased bread pan, bake for 35-50mins (PLEASE keep an eye on it, mine slightly burnt after about 40 minutes) If the side is still goey, put aluminium foil over the top and cook for a bit longer to firm! Take out and let sit for about 10mins before removing from pan and slicing!
